Which trades is Fixbooks for?

It is deliberately trade-agnostic: plumbing, electrical, heating, handyman, appliance repair, locksmiths, painting and decorating, gardening, cleaning and pest control all run on the same engine.

Can I quote and invoice from my phone on site?

Yes. Build a quote on site, have it accepted from the customer's phone, then raise the invoice straight from the completed job sheet — so today's work is invoiced today rather than on Sunday night.
